Easy Mediterranean Bean Soup

Mediterranean soup is Mediterranean cuisine at its best. And 'know that the Mediterranean diet is one of the healthiest ways to cook on earth. 1 Put water and beans in the pressure cooker. Attach the pressure andcook for 60 minutes, if not before, beans, soaked overnight or longer were 30 minutes if they have been soaked before.

1 / 2 large onion, coarsely chopped

1-1/2 medium carrots, peeled and coarsely chopped

1 clove garlic, crushed

1 tablespoon extra virgin olive oil

3 / 8Teaspoon pepper

2 Add the other ingredients in the pan and cook under pressure for 8 minutes.

3 Remove the lid and add the chicken broth or water if the soup is too thick. Taste and more salt and pepper if necessary.

4 piece of French toast, sprinkled with olive oil, salt and pepper

4 Serve the soup with toast floating on top and sprinkle with Parmesan cheese, ifdesired.
