Easy Mediterranean Bean Soup

Mediterranean soup is Mediterranean cuisine at its best. And 'know that the Mediterranean diet is one of the healthiest ways to cook on earth. 1-1/2 medium carrots, peeled and coarsely chopped

1 clove garlic, crushed

1 tablespoon extra virgin olive oil

1 / 2 teaspoon dried thyme

1 bay leaf left

1 / 2 teaspoon salt

3 / 8Teaspoon pepper

2 Add the other ingredients in the pan and cook under pressure for 8 minutes.

3 Remove the lid and add the chicken broth or water if the soup is too thick. Taste and more salt and pepper if necessary.

4 piece of French toast, sprinkled with olive oil, salt and pepper

4 Serve the soup with toast floating on top and sprinkle with Parmesan cheese, ifdesired.
